I’ve been wanting to make Smitten Kitchen’s recipe for Pizza Beans for ages and the Month of Cin seemed like the perfect time. If I was being a little more suave, I’d call it a Gratin of of Tomato and Giant Beans. But, honestly, the title of Pizza Beans is perfect. Delicious tomato-y goodness and melted cheese? Rancho gordo’s Royal Corona beans? Oh yes. The meat eaters among you could add some Italian sausage or pepperoni and be very happy.
My only complaint about an otherwise lovely dish? The Royal Coronas, while tasty, are a little thicker skinned than I enjoy. I would definitely make this again using a thinner-skinned bean.
